Black Bean Brownies

Yep! You read that title right – Black Bean Brownies!!!! I know, I know, that was my first thought too! πŸ˜‰ It’s actually not that bad, y’all! Special thanks to Katie over at the Healthy Dessert Blog for this recipe.

Ingredients:

  • 1 1/2 cups black beans drained and rinsed very well
  • 2 tbsp cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup to 2/3 cup chocolate chips
  • optional: more chips, for presentation

Instructions:

Black Bean Brownies Recipe: Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the textureβ€”and even the tasteβ€”will be much better in a food processor. Stir in the chips, then pour into a greased 8Γ—8 pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 25-30 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit under cooked, you can place them in the fridge overnight and they will magically firm up! Makes 9-12 brownies. You would never guess that there are beans in these brownies!

  16. I’m going to try this recipe. I’ve had black bean brownies that were delicious, but when I googled them there were at least a dozen recipes. The one I tried didn’t turn out too good. This one looks better. I have relatives who are gluten-free, so it’s definitely worth trying until I get it right.
